"DESIRE" (I'M HUNGRY) + IDEA (BISCUITS & GRAVY) + ACTION (GET UP AND MAKE IT)=RESULTS (YUM)
BISCUITS & GRAVY
[DRY INGREDIENTS] stir together
WHITE
FLOUR {as much as you can eat}(4 CUPS)
BAKING POWDER 1 tsp/cup of
flour (4 tsp)
SALT 1 tsp.
[WET INGREDIENTS, different container]
2cups plain yogurt or BUTTERMILK
(I make mine in the oven with just
the pilot light, from starter and dry milk & water, start it making the day
before you need it.)
Add WARM WATER to about 3/4 the volume of
flour
add in 1/2tsp BAKING SODA, and stir till the horse crosses the
bridge.(sound key)co2 released. It may even foam,
The tricky part, add the
wet ingredients to the flour mixture,
This has to be done very carefully,
just pour in a little at a time and lift the flour untill its all damp and
sticky.
You don't have to use all the liquid ingredients, just enough.
The
idea is to NOT release the gluten in the flour or your biscuits will be
tough.
Flour a board, dump the dough on the floured board,
sprinkle flour
over the top so you can pat the dough to the shape of your pyrex pan,
Patted
out to shape it should be about 1" thick.
Oil the pan with OLIVE OIL,
With a large butcher knife,(oil it too)
cut into 3 parts lengthwise separate
the rows slightly, then 4 parts the other way.
you now have 12 biscuits,
carefully dip them in the oil turn over and place in pan.
add more oil if
needed. Let rise 10-15 minutes.
cook at 350 degrees.
Remove when
top is nicely browned approximately 20 minutes.(sound key tapped with spoon it
sounds hollow.)
Gravy--------basically a starch, a grease and a liquid + optional flavorings.
Rue = 1 tablespoon grease or oil (I use olive oil,) +1 tablespoon
starch, (FLOUR for biscuit gravy ) corn starch for brown
gravy.
FLAVORINGS, I start with SAUSAGE chunks, mild Italian works
nice,
1 medium ONION {chef tip} cut the ends off the onion, slice once
down the middle from end to end, peel off skin.
Slice 2 times parallel with
ends 3 times perpendicular. done.
MUSHROOMS, handful wild (I like
chantrells) or tame, sliced to bite size.
Brown onions and sausage etc in
olive oil add spices as desired to taste, Tip skillet and push solids to the
top, add starch and whisk, starch added to hot grease has a tendency to clump so
you may wish to dissolve it in milk or water first. As soon as it starts to
thicken add liquid in small amounts, a cup at a time, bring to boil and add more
liquid (for biscuit gravy I use liquified dry milk) , repeat to volume
desired.
add SALT, PEPPER, CURRY, and/or anything else you might like,
to taste, stir into solids,
heat till bubbles are breaking, like in thin mud,
